1 3/4 c. Plain Flour
1 1/4 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
2/3 c. Sugar
1/3 c. Butter
2 Eggs
2 TB Milk
1 tsp Vanilla
1 c. Banana, mashed
2/3 c. Coconut
1/2 c. Chocolate Chips
In a bowl combine flour, baking powder, baking soda, and salt. Set aside. In a large mixing bowl beat sugar and butter. Add eggs one at a time beating after each addition. Stir in milk and vanilla. Gradually add flour mixture until incorporated then stir in bananas. Fold in flaked coconut and chocolate chips. Pour batter into greased pan. Bake at 350 degrees for 45 - 50 minutes. Cool 10 minutes in pan then remove to wire rack. Cool completely.
